Ingredients:
2 lb. ground beef2 medium onions, chopped 1 clove garlic, minced 2 tblsp. olive oil 2 apples, peeled, cored and chopped 3 jalapeno peppers, seeded and sliced into thin strips 1/2 cup raisins 1/4 cup pimiento-stuffed olives, sliced 1/8 tsp. ground cinnamon 1/8 tsp. ground cloves 1/4 tsp. salt 1/8 tsp. pepper 1/4 cup slivered almonds 2 tblsp. olive oil Hot cooked rice
Directions:
Brown ground beef, onion, and garlic in 2 tblsp. hot olive oil. Add next 8 ingredients; simmer 20 minutes. Saute' almonds in 2 tblsp. olive oil until brown. Drain almonds and sprinkle over meat mixture. Serve over hot cooked rice.Note: Meat mixture freezes well. To reheat, combine thawed meat mixture and 2 tbsp. water in a medium saucepan. Cook over low heat until thoroughly heated. Yield: 6 servings |
