Ingredients
- 3 med. potatoes - peeled and cubed
- 1/2 celery stalk - minced
- 1 Tbls. minced onion
- 1/4 carrot - grated
- 2 cups chicken broth
- 2 tsp. white vinegar
- 1 tsp. salt
- 1 1/2 cups milk - lowfat okay
- 2 Tbls. flour
- 1 Tbls. shredded cheddar cheese - lowfat okay
- 1 Tbls. shredded monterey jack cheese - lowfat okay
- 2 slices bacon - prepared, crumbled

Preparation Time : 0:35
Bring potatoes, celery, onion, carrot, chicken broth, vinegar, and salt to boil in saucepan.
-Cover and simmer 20 minutes.
-Whisk together milk and flour.
-Stir into saucepan.
-Simmer uncovered 5-8 minutes, or until thick.
-Pour into 2 bowls.
-Sprinkle cheese and bacon on top of soup.
