Ingredients:
3 med. potatoes - peeled and cubed1/2 celery stalk - minced 1 Tbls. minced onion 1/4 carrot - grated 2 cups chicken broth 2 tsp. white vinegar 1 tsp. salt 1 1/2 cups milk - lowfat okay 2 Tbls. flour 1 Tbls. shredded cheddar cheese - lowfat okay 1 Tbls. shredded monterey jack cheese - lowfat okay 2 slices bacon - prepared, crumbled
Directions:
Serves : 2 Preparation Time : 0:35 Bring potatoes, celery, onion, carrot, chicken broth, vinegar, and salt to boil in saucepan. -Cover and simmer 20 minutes. -Whisk together milk and flour. -Stir into saucepan. -Simmer uncovered 5-8 minutes, or until thick. -Pour into 2 bowls. -Sprinkle cheese and bacon on top of soup. (1) VISITOR COMMENT: "The vinegar made me wonder, but it turned out great!" |
