Orange Oven Poached Spring Salmon Recipe

Ingredients:

  • 8 lbs. fresh spring salmon
  • 2 cups fine bread crumbs
  • salt and freshly ground black pepper, to taste
  • 2 tsp. grated orange rind
  • 1/2 cup orange juice
  • 1/4 cup melted butter

Directions:
Preheat the oven to 375 degrees. Cut the salmon into steaks. Mix the crumbs, salt, pepper and grated orange rind in a large bowl. Roll the fish in the seasoned crumbs. Place in a buttered baking dish. Mix the orange juice with the melted butter and spoon over the fish. Bake, covered, at 375 degree for 20-35 minutes or until the fish flakes easily.

Makes 10-12 servings
