Ingredients

  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 Tbsp. cooking oil
  • 2 20-oz. cans cannellini beans, drained
  • 1 16-oz. can stewed tomatoes
  • 4 oz. salami, pepperoni, or mortadella, chopped
  • 1/2 tsp. dried basil, crushed
  • 1/2 tsp. dried oregano, crushed
  • dash pepper
  • 1 cup shredded provolone cheese (4 oz.)

Directions

In skillet cook onion and garlic in cooking oil till onion is tender. Stir in cannellini beans, tomatoes, salami, basil, oregano, and pepper.

Turn mixture into a 2-quart casserole. Bake, uncovered, in a 350 degrees oven for 50 minutes. Sprinkle with provolone cheese; bake about 5 minutes longer or till cheese is melted. Serve in sauce dishes. Makes 8 servings.
