Ingredients
- 2 cups flour
 - 1 t baking soda
 - 1 t baking powder
 - 1/4 t salt
 - 1/2 cup margarine
 - 3/4 cup sugar
 - 2 eggs
 - 2/3 cup sour cream
 - 1/4 cup fresh lemon juice
 - 1 t vanilla
 - 3 T poppy seeds
 - grated peel of one lemon
 
Directions
Stir together flour, baking powder, baking soda, and salt. Cream margarine and sugar until fluffy, then add eggs one at a time. Add flour mixture alternately with sour cream, lemon juice, and vanilla; mix until just blended. Fold in poppy seeds and lemon peel. Put into 12 muffin cups and sprinkle tops with sugar if desired.
 Bake at 375 degrees for 18-20 minutes.
