Oma assumed you knew how to fold (apples not too close to the edges) and roll ( ending with seam side down) and carefully place on a baking sheet. She never worked with a recipe. We gleaned this one from her one baking day.. Enjoy..

Ingredients

  • 1 lb. potatoes, cooked
  • 10 oz. self- rising flour
  • 8 oz. sugar
  • 4 oz. butter
  • few drops vanilla extract
  • 2 lightly beaten eggs
  • 2 1/2 lbs. apples
  • 3 oz. raisins
  • 1 oz. sugar (or to taste)
  • 1 tsp ground cinnamon (or to taste)
  • Butter, melted for brushing

Directions

Preheat oven to 400*F.
Mash the potatoes and then mix them thoroughly in a large mixing bowl. Add the sugar, eggs, butter and vanilla extract. Mix together into a firm dough. If the dough is a little sticky, then add a little more flour.
Peel, core and slice the apples. Roll out the dough into a large rectangle and then cover with the apple slices, raisins, and sprinkle with a little sugar and cinnamon to taste.
Fold in the sides of the rectangle, then roll it up. Brush with a little melted butter. Bake in the oven for 25-30 minutes until golden brown.
