Ingredients

  • 1 pound halibut fillets, sliced 1/2-inch thick
  • 2 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1/2 teaspoon salt
  • 2 teaspoons white pepper
  • 2 teaspoons black pepper
  • 2 teaspoons cayenne pepper
  • 2 teaspoons thyme
  • 2 teaspoons oregano
  • 1 teaspoon paprika

Directions

Place halibut in a bowl with olive oil and let stand 30 minutes. Combine spices in a 9-inch pie plate.
Heat cast iron skillet upside down over high heat 5-10 minutes, or until very hot. Using a hot pad, turn pan right side up. Remove halibut from olive oil and drain.
Dip fillets into seasonings and coat each side evenly.
Put fillets into hot skillet and cook 2-3 minutes on each side, turning only once.
Variations: use bass, snapper or red fish instead of halibut
