Ingredients:

  • Etoufee means "smothered" so any number of ingredients are possible.Basically a stew.. Long slow cooking.
  • Chicken, beef or rabbit (about 3 pounds) cut up as for stewing
  • 4-5 sliced onions
  • 2 bell peppers, chopped
  • garlic ( lots, or to taste!!)sliced or minced
  • Creole seasoning (again , to taste)
  • Cooked rice
  • Creole Seasoning:
  • 1/4 cup salt
  • 1 Tbls.garlic powder
  • 1 Tbls. black pepper
  • 1 Tbls. Paprika
  • 3/4 tsp. onion powder
  • 1/4 tsp. cayenne pepper
  • 1/4 tsp. dried thyme
  • 1/4 tsp. dried oregano
  • Mix all ingredients together. Store in a glass jar.

Directions:
Brown onions, peppers,garlic, add creole seasoning, add meat and water (about 2 cups). Cook long and slow until meat is done and very tender. Some meats take a very long time and may require additional water. Check for seasoning. Serve over rice.
