Ingredients:

  • 6 roma tomatoes
  • 1 bell pepper
  • 1 Anaheim pepper
  • 1 cucumber (small)
  • 2 cloves garlic
  • 3 tbsps olive oil
  • 2 tbsps vinegar
  • Croutons

Directions:
Crush or mince garlic. Add peppers, tomatoes, cucumber (peeled) and process in a food processor until semi-liquified. Add olive oil gradually. Add vinegar and stir until mixed.

Salt and pepper to taste, serve very cold with croutons.
