Spanish Soup | |
Ingredients:
6 roma tomatoes1 bell pepper 1 Anaheim pepper 1 cucumber (small) 2 cloves garlic 3 tbsps olive oil 2 tbsps vinegar Croutons
Directions:
Crush or mince garlic. Add peppers, tomatoes, cucumber (peeled) and process in a food processor until semi-liquified. Add olive oil gradually. Add vinegar and stir until mixed.Salt and pepper to taste, serve very cold with croutons. |
