Ingredients

  • 2 pounds fresh spinach (or 3/4 pounds frozen spinach, thawed)
  • 1 tablespoon peanut oil
  • salt to taste
  • 1 tablespoon soy sauce

Directions

Wash the spinach thoroughly and drain off excess water.
Heat the oil in a large sauce pan, add the spinach and cook over high-heat 1 minute, stirring all the time, until the spinach softens and wilts.
Lower heat and add the salt and soy sauce. Cook another minute.
