Ingredients

  • 1/2 cups wheat germ
  • 1 cups flour
  • 3/4 cups sugar
  • 3/4 teaspoons baking soda
  • 1/2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1 1/2 teaspoons cinnamon, ground
  • 1/2 teaspoons nutmeg, ground
  • 2 eggs
  • 1/2 cups oil
  • 1 teaspoons vanilla
  • 1 cups carrot, grated
  • 1 cups nectarine, chopped
  • 1/2 cups walnuts, chopped
  • 1/4 cups powdered sugar

Directions

In a large bowl mix together wheat germ, flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg. Add eggs, oil, and vanilla; mix well. Stir in grated carrots, chopped nectarines, and chopped walnuts. Pour into a well-greased and floured fluted cake pan. Bake in a 350 degree oven for 50 minutes or until the center is set. Cool for 10 to 15 minutes in the pan; invert and cool on a wire rack. Sprinkle the top with powdered sugar.
