Nectarine Carrot Picnic Cake Recipe | |

Ingredients:
1/2 cups wheat germ 1 cups flour 3/4 cups sugar 3/4 teaspoons baking soda 1/2 teaspoons baking powder 1/2 teaspoons salt 1 1/2 teaspoons cinnamon, ground 1/2 teaspoons nutmeg, ground 2 eggs 1/2 cups oil 1 teaspoons vanilla 1 cups carrot, grated 1 cups nectarine, chopped 1/2 cups walnuts, chopped 1/4 cups powdered sugar
Directions:
In a large bowl mix together wheat germ, flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg. Add eggs, oil, and vanilla; mix well. Stir in grated carrots, chopped nectarines, and chopped walnuts. Pour into a well-greased and floured fluted cake pan. Bake in a 350 degree oven for 50 minutes or until the center is set. Cool for 10 to 15 minutes in the pan; invert and cool on a wire rack. Sprinkle the top with powdered sugar. This recipe serves 16 people
