Ingredients
- 3 ripe mangoes or 1 jar of sliced mango (available in the refrigerated section of most groceries)
- 1/2 red onion
- 1/2 red pepper
- 2 roma tomatoes
- Splash of lemon or lime juice
- 3-4 sprigs of fresh cilantro
- Salt and pepper to taste
Directions
Dice mango, onion, red pepper and tomatoes, place in a bowl and toss with citrus juice. Add cilantro, salt and pepper to taste and allow to blend flavors for at least 1/2 hour.
This can be served warm over pork, chicken or fish, served room temperature with shrimp or more like a traditional salsa with chips.
