Comment: These are cheesy, and you can use most any leftover fish with tasty results.

Ingredients

  • 2 eggs, beaten
  • 1/2 cup dry bread crumbs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1-1/2 tsp. minced fresh parsley
  • 1/4 tsp dill weed
  • 1/4 tsp pepper
  • 1-1/2 cups flaked cooked fish
  • Oil for deep-fat frying
  • Tartar sauce, optional

Directions

In a bowl, combine the first eight ingredients: mix well. Stir in the fish. Roll into one inch balls. Heat oil in a deep-fat fryer to 375 degrees. Fry the fish balls for two minutes or until golden brown; drain on paper towels. Serve with tartar sauce, if desired.


Makes about 2-1/2 dozen
