Pork Tenderloin with Dried Fruit Recipe

Ingredients:

  • 1 1/2 pounds pork tenderloin, trimmed
  • 1/4 cup light brown sugar, packed
  • 1/4 cup orange marmalade
  • 1/4 cup beef broth
  • 1/4 cup red wine
  • 1/4 cup dried apricots, chopped
  • 1/4 cup raisins

Directions:
Place tenderloin in a roasting pan. In a small saucepan, heat marmalade with brown sugar until sugar is dissolved; brush over pork. Add broth, wine, apricots and raisins to the pan. Cover and bake at 350 for about 45 minutes, or until no longer pink and a meat thermometer registers at least 160 in the center, basting frequently with pan juices. Serve sliced, with sauce and fruit spooned over top.

Serves 4 to 6.
