Ingredients:

  • 1 lb whole fresh mushrooms
  • 1 box frozen, chopped spinach
  • 2 egg whites
  • /2 to 1 C seasoned bread crumbs
  • 1 C finely shredded Parmesan cheese
  • 2 T margarine

Directions:
Remove stems from mushrooms. Chop stems and cook with spinach according to package directions. Drain and mix with egg whites, bread crumbs and cheese. Saute mushroom caps in margarine for 5 minutes, then stuff with spinach mixture. Heat through at 350* for 5 to 10 minutes. (Robin says this is heart-healthy, and from the American Heart Association cookbook.
