Ingredients

  • 3 tblsp green onions, finely chopped
  • 1 tblsp garlic, finely chopped
  • 1 tsp galanga, finely chopped
  • 1 tblsp lemongrass, chopped
  • 2 cloves (french: "clou de girofle")
  • 1 tblsp coriander seeds
  • 1 tsp cumin seeds
  • 5 black pepper seeds
  • 3 red hot pepper, chopped
  • 1 tsp salt
  • 1 tsp shrimp paste

Directions

Heat wok and grill without fat or oil, green onions, garlic, galanga, lemongrass, cloves, coriander seeds, cumin seeds, low heat for about 5 minutes. Reduce to powder.
Add other ingredients without shrimp paste and blend. Add shrimp paste and blend again.
