Mussaman curry paste Recipe

  Thai Chicken

Ingredients:
3 tblsp green onions, finely chopped
1 tblsp garlic, finely chopped
1 tsp galanga, finely chopped
1 tblsp lemongrass, chopped
2 cloves (french: "clou de girofle")
1 tblsp coriander seeds
1 tsp cumin seeds
5 black pepper seeds
3 red hot pepper, chopped
1 tsp salt
1 tsp shrimp paste

Directions:
Heat wok and grill without fat or oil, green onions, garlic, galanga, lemongrass, cloves, coriander seeds, cumin seeds, low heat for about 5 minutes. Reduce to powder.
Add other ingredients without shrimp paste and blend. Add shrimp paste and blend again.
1/2 cup fine paste
