Although I've been meaning to, I've never tried this one. There are several others at cook-books.com.
- 6 Tbsp. butter
- 6 Tbsp. flour
- 1 1/2 c. Vermont maple syrup
- 1/2 c. hot water
- 1 tsp. vanilla
- 2 egg yolks, slightly beaten
Mix in pot the flour and syrup over medium heat, stir-
ring constantly. Stir until you see the heat begin to rise
from the mixture. Stir in other ingredients and bring to a
slow boil until thickened. Pour into precooked pie shell.
Chill. This may be topped with meringue or whipped cream.
