Upside Down Date Pudding Recipe

Ingredients:

  • Pudding:
  • 1 cup pitted dates, cut up
  • 1 cup boiling water
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed brown sugar
  • 1 egg
  • 2 tablespoons butter, melted
  • 1 1/2 cups flour, sifted
  • 1 teaspoon soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts
  • Brown Sugar Sauce:
  • 1 1/2 cups firmly packed brown sugar
  • 1 1/2 cups boiling water
  • 1 tablespoon butter

Directions:
Pudding: Combine dates and water in a bowl; let cool. Blend together sugars, egg and butter in a mixing bowl. Sift together dry ingredients; add to sugar mixture. Stir nuts and cooled date mixture into batter. Pour batter into a 11x7x1 1/2-inch baking dish. Top with Brown Sugar Sauce.

Sauce: Combine all ingredients, stirring well. Pour sauce over batter. Bake at 375 degrees F. for 40 minutes. Cut into squares and invert onto plates. Serve warm with whipped cream. Yield: 9 servings
