I have served this many times and everyone loves it and can't believe it is "raw" fish. You have to start with very fresh fish not frozen ones. Enjoy

Ingredients

  • 2 lbs fillets, fresh sole or halibut, cut into 1/2 inches pieces
  • 1 cup lemon juice
  • 2 tomatoes, peeled, seeded & chopped
  • 1 large onion, chopped
  • 1/2 cup olive oil
  • 1 jar(2 1/2oz) capers, drained & chopped 10-15 stuffed green olives, chopped
  • 1/2 cup chopped fresh coriander
  • 2 med avocados, diced
  • salt
  • l yellow banana pepper, seeded & chopped
  • Lemon wedges

Directions

Combine fresh fish & lemon juice in med bowl, Let stand, stirring often 1 hour. Drain.

Combine fish, tomatoes, onions, oil, capers olives and coriander in serving bowl. Mix well. Season to taste with salt.
Sprinkle with banana peppers and garnish with lemon wedges.


Seves 8-10 as an appetizer course.
