Clean the fish and make a few small deep cuts on the thick part of the fish. Marinate the fish in #1 for 10 minutes. Combine, in separate bowls, #'s 2,3 & 4. Heat a wok then add oil. Remove the fish from the marinade and deep- fry it until golden brown; remove and keep warm on a serving plate. Remove the oil. Reheat the wok, add 4 T. oil. Stir fry #2 and #3 until fragrant. Add #4; stir until liquid thickens. Pour over fish and serve hot.
Almost any fish can be prepared with this recipe. The type of oil used is your choice. I prefer peanut oil. Nice served with pickled cucumber. My family rates this one Four Stars. Enjoy...
