Ingredients

  • 2 Tbsp. butter (1/4 stick)
  • 2 green onions (white only),
  • chopped
  • 3/4 lb. ripe tomatoes, peeled,
  • seeded and chopped
  • 1/2 c. vodka
  • 2 c. whipping cream
  • 2 tsp. pink peppercorns,
  • crushed
  • salt
  • freshly ground white pepper

Directions

Melt butter in heavy medium skillet over medium heat.Add green onion and stir until translucent (1 minute). Add vodka and boil until evaporated. Add tomatoes, cream and peppercorns. Simmer until reduced and thickened. Season with salt and white pepper. Makes 2 cups.
