Ingredients

  • Veal shanks
  • seasoned flour
  • celery,carrot,onion 1/4" diced
  • butter for saute'ing
  • canned or fresh tomatoes with juice
  • chicken stock
  • white wine
  • bayleaf, tarragon, garlic, rosemary

Directions

Dredge veal shanks in seasoned and saute' in butter until browned on all sides. Add vegetables and continue to saute until wilted. Add wine and reduce 3/4. Add stock, herbs, garlic,and tomato. Cover and place in 350 degree oven for approx. 2-1/2 hours until meat is tender.
