Freezes beautifully.
Ingredients
- 6 to 8 (15oz.) cans tomatoes, cut up
- 2 large cans tomato sauce
- 3 to 5 (10oz.) pkgs. frozen okra
- 1 (10oz.) pkg. each: frozen peas, baby limas, yellow corn and cut green beans
- 2 large onions, chopped
- All of the following: dried basil (lots), dried parsley (lots), dried oregano (a little), dried tarragon (a little), freshly ground black pepper (lots), salt (a little), and sugar (a little).
- 1/4 cup Worcestershire sauce
- 2 (14 1/2oz.) cans low-sodium chicken broth
Directions
Place all ingredients in a large stock pot. (I use a 12 quart pot.) Bring to a low boil, lower heat and simmer for 2 hours. ( When serving, place a small pat of butter in each soup bowl. Ladle in soup and swirl to combine.)
Makes 6 quarts.
