Instead of oiling and flouring pan, I spray with non-stick spray.

Ingredients

  • 1&1/2 C Wheat flour
  • 1/2 t baking soda
  • 1/2 t salt
  • 1 t cinnamon
  • 2 eggs
  • 1/2 C brown sugar
  • 1/2 C vegtable oil
  • 1 t vanilla
  • 3/4 C drained finely chopped pineapple
  • 1 C grated carrots
  • 1/2 C chopped nuts

Directions

Preheat oven to 325.

Mix flour, soda, salt and cinnamon, set aside.

With a spoon, beat together eggs, oil, sugar, and vanilla. Stir in pineapple. Stir in dry ingredients. Fold in carrots and nuts, turn into a oiled and floured loaf pan.

Bake 50 to 60 minutes or until a tooth pick comes out clean. Let stand 5 minutes on wire rack, then turn out on rack to cool.
