Carrot Pineapple Bread Recipe | |

Ingredients:
1&1/2 C Wheat flour1/2 t baking soda 1/2 t salt 1 t cinnamon 2 eggs 1/2 C brown sugar 1/2 C vegtable oil 1 t vanilla 3/4 C drained finely chopped pineapple 1 C grated carrots 1/2 C chopped nuts
Directions:
Preheat oven to 325.Mix flour, soda, salt and cinnamon, set aside. With a spoon, beat together eggs, oil, sugar, and vanilla. Stir in pineapple. Stir in dry ingredients. Fold in carrots and nuts, turn into a oiled and floured loaf pan. Bake 50 to 60 minutes or until a tooth pick comes out clean. Let stand 5 minutes on wire rack, then turn out on rack to cool. Instead of oiling and flouring pan, I spray with non-stick spray.
