Ingredients
- 4 Large Bell Peppers, seeded and tops cut off
- 1 medium onion, diced
- 1 pint leftover rice(or buy at chinese restaurant)
- 2 T. oil
- 1/4# bacon, diced
- 4 slices of bacon
- 1 can tomato soup
- salt and pepper to taste
- onion and garlic powder
- 1# lean hamburger
- 4 finger size pieces of cheddar cheese
Directions
Saute hamburger in oil until cooked, add onion and cook 5 minutes. Drain excess oil and stir meat into cooked rice. Add spices to taste. Stuff pepper with mixture, place 1 stick of cheese in center of pepper and press down. Cut bacon strips in half and criss cross 1 piece of bacon over top of pepper and place top on pepper. In a pan, add soup with 1 soup can of water, add diced bacon and bring to a boil. Place peppers in pan, reduce heat to a low simmer, cover and cook for 1 hour. Spoon extra sauce over all to serve."
