Almond Jacone Recipe

Ingredients:

Almond Meal 3 lb 12 oz
Granulated Sugar 3 lb 12 oz
Eggs 2 qts
Egg Whites 1 1/2 qts
Cake Flour 1 lb 5 oz

Directions:
Whip the eggs and the sugar on high speed 5 minutes. in three batches each fold in the cake flour and almond meal. Whip the whites stiff but not dry and fold in to batter.
8 sheet pans should be well buttered and sugared. Bake at 375, 9 minutes.

Great with coffee butter cream and ganash.
