Ingredients

  • 1/2 cup finely shredded carrot
  • 1/2 cup finely shredded zucchini
  • 3 1/2 cups Oat Bran Options Brand Cereal
  • 1 1/4 cups skim milk
  • 2 egg whites or 1/2 cup cholesterol-free egg product
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon vanilla
  • 1 1/2 cups all-purpose flour
  • 1/4 to 1/2 cup packed brown sugar
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves

Directions

Preheat oven to 400 degrees. Coat with non-stick spray or paper-line 12 (2 1/2-inch) muffin cups. In medium bowl, combine carrots, zucchini, cereal, milk, egg whites, oil, and vanilla. Let stand 5 minutes. In large bowl, combine dry ingredients. Add cereal mixture to flour mixture all at once, stirring just until moistened. Spoon into muffin cups. Bake 20 to 25 minutes or until a wooden pick inserted in the center comes out clean.
