Ingredients

  • 3 egg whites
  • 1 cup sugar
  • 1/4 tsp baking powder
  • 1 tsp vanilla
  • 20 round buttery crackers, rolled fine
  • 1 cup finely chopped pecans
  • whipped cream

Directions

Grease a 9-inch glass piepan. Beat egg whites until stiff: then fold in sugar, baking powder, and vanilla extract. Beat until stiff. Fold in cracker crumbs and chopped pecans. Pour mixture into piepan. Bake at 350 degrees for 20 minutes.


To serve, top with whipped cream. 6-8 servings.
