  • My Fannie Farmer Cookbook says:
  • "Commercially frozen potatoes have been partially dehydrated so that they keep their texture after defrosting. Don't freeze potato dishes yourself, for they lose their consistency. Always store potatoes in a cool, dry, dark place and use them before they start to sprout. Do not refrigerate. If they are not cooked immediately, peeled potatoes will discolor unless you cover them with cold water."
