Ingredients:

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/2 cup chopped onions
  • 1 teaspoon finely chopped garlic
  • 1/4 cup finely chopped parsley
  • 1 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 1 1/2 teaspoons salt
  • 1 teaspoon freshly ground black pepper

Directions:
In a bowl, combine the oil and vinegar, and beat them together with a whisk or fork. Stir in remaining ingredients, and taste for seasoning. To develop it's flavor, let the sauce stand at room temperature before serving. Chimichurri is a traditional sauce for grilled and roasted meats.
