This is an old recipe from before English cucumbers were readily available. If you do use the large English cucumbers, do double the pickling mixture or use half as many cucumbers.
Ingredients
- 25 medium cucumbers, sliced
- 12 medium onions, sliced
- 1/2 cup salt
- 1 quart vinegar
- 2 cups sugar
- 2 teaspoons mustard seed
- 2 teaspoons turmeric
- 2 teaspoons celery seed
- 1 stick cinnamon
Directions
Soak the cucumbers and onion slices in ice water with salt for 3 hours. In large kettle, heat remaining ingredients to boiling. Simmer for 5 minutes. Remove cinnamon stick. Drain cucumbers and onion and add to pickling mixture. Heat for 2 minutes, but don't let mixture boil. Fill clean jars and seal at once.
It may be necessary to double the pickling mixture if cucumbers are large.
5 quarts.
