Ingredients
- 1 Cup oil
- 1-1/2 Cups brown sugar
- 4 eggs
- Group 2:
- 2 Cups flour
- 1 t baking powder
- 2 tsp salt
- 2 tsp cinnamon
- 2 tsp allspice
- 1 tsp cloves
- 1 Cup fruit juice, any kind you like, orange, apple, pineapple...
- 1 Cup flour
- 1 Cup citron
- Any combo of
- 1 Cup pineapple 5-1/2 Cups fruit and
- 1 Cup raisins or currants 3 Cups nuts
- 1-1/2 Cup whole cherries
- 1 Cup dates
- 3 Cups nuts
- Glaze:
- 1/4 Cup brown sugar
- 2 Tbls. corn syrup
- 2 Tbls. water
Directions
Mix together oil, brown sugar, and eggs. Beat two minutes. ""1""
Sift dry ingredients in group ""2""
Stir ""2"" into ""1"" alternately with fruit juice.
Mix 1 Cup flour with fruits and nuts to separate fruit.
Mix batter with fruit.
Grease and flour two large loaf pans or one tube pan. Line with brown paper and grease again. Put pan of water on lower rack of oven. Bake on middle rack at 275' for 2-1/2 to 3 hrs.
Let stand for fifteen minutes and remove from pan. Let cool. Wrap in clean cloth soaked with rum or brandy or fruit juice. Wrap foil over cloth wrapped cake. Store in cool dry place.
Glaze before serving.
Boil all glaze ingredients for two minutes, and brush on cake
