Ingredients

  • 2 t salt
  • 3 cloves garlic
  • 1 t paprika
  • 1 t oregano
  • 1 t rosemary (more if using fresh)
  • 2 T lemon juice
  • 1/2 c oil

Directions

Crush salt and garlic cloves together until they form a paste. Add other seasonings and mix. Add lemon juice, mix. Finally add oil and mix well.
I have done this in a blender before but the garlic and salt isn't quite the same so I usually mix it in a shaker or just stir.

Pour mixture over your roast and marinade for 3hrs-overnight. Roast as usual, basting occasionally.
