Ingredients

  • 1 (10-12 lb.)fully cooked bone-in ham
  • 2 c. apple juice or cider
  • 3/4 tsp. whole allspice
  • 1 tsp. whole cloves
  • 1/2 tsp. whole ginger
  • 3(2"") cinnamon sticks
  • 1 c. honey
  • Whole cloves
  • Paprika

Directions

Place ham, fat side up, on rack in shallow pan. Insert meat thermometer into center so it does not touch bone. Heat apple juice with allspice, 1 tsp. whole cloves, ginger and stick cinnamon in saucepan, bringing to a boil. Cover and boil 5 minutes. Remove from heat and brush a little of this mixture over ham. Bake ham in slow oven (325 degrees F.)1 1/2 to 2 hours, basting every 15 minutes with the spiced apple juice mixture. Drizzle 1/2 c. honey over ham. Bake 30 minutes longer. Remove from oven, drizzle on remaining 1/2 c. honey. Bake 30 minutes, or until thermometer indicates internal temperature of 160 degrees F., about 15 minutes per pound. Remove from oven and cool 30 minutes. Score fat, stud with whole cloves and sprinkle lavishly with paprika. Place on platter. For the Christmas holidays, garnish platter with a few holly sprays; at other seasons, garnish with pickled peaches, drained and tucked in nests of parsley.
