I especially like this with leftover roast beef.


  • 1/2 c. chopped cooked meat (beef, pork, chicken, etc.)
  • 1/2 c. cottage cheese
  • 2-3 chopped green onions
  • Salsa
  • 6 flour or corn tortillas
  • Shredded cheese


Put 1/2 c. salsa & cottage cheese in small skillet, stir till cheese begins to melt, add onions, meat and salt & pepper, if desired. Put about 1/4 c. mixture on each tortilla, roll up, place seam side down in baking dish (1 layer). Add more salsa, to taste, over top. Top with any kind shredded cheese, as much as you like. Bake at 350 about 15-20 min. till cheese melts and filling is hot.
