Ingredients

  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups white sugar
  • 2 tsp. vanilla
  • 1/4 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 1 cup nuts, chopped
  • 2 cups shredded zucchini
  • 3 cups flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 3/4 tsp.nutmeg
  • 18 1/2 oz. can drained, crushed pineapple

Directions

Beat together eggs, oil, sugar and vanilla. Stir in zucchini and pineapple. Add dry ingredients and nuts. Mix well. Pour into two greased loaf pans.

Bake at 350F for 1 hour.
