Ingredients

  • 1 pork tenderloin (remove silvery membrane, if any)
  • 1 thinly sliced onion
  • 2 or more cups apple juice
  • 2 tsp. marjoram
  • 1 apple, peeled and sliced (optional)
  • 1/4 cup or so sour cream
  • garlic salt and pepper to taste

Directions

Cut tenderloin in half to fit fry pan. Marinate in onions, apple, juice and marjoram for at least an hour, or longer if you can.
Spray or lightly oil a heavy skillet. Lift the onions out of the marinade and saute. Deglaze the pan several times until they are browning well. Push the onions aside, season the pork with garlic salt (or powder) and pepper. Sear the meat on all sides, add a little more marinade to deglaze. Add apples, cover and cook until done..maybe 10 minutes depending on the girth of the meat. Cut into it to check for desired doneness. Deglaze a few more times then add the rest of the marinade and more apple juice if you want it "saucy". Cook down a bit and enrich with dollops of sour cream if you wish. Slice and serve with sauce on top. 2 or 3 servings.
Good served with some type of fruited rice.
