If you do not have Italian flavored bread crumbs, you can use regular bread crumbs with 1 T. Italian seasoning crumbed and mixed in.


  • 4 chicken breasts, skinned
  • 4 slices mozzarella cheese
  • parmesan cheese
  • 1/2 c. Italian bread crumbs
  • 1/2 c. flour
  • oil
  • salt and pepper to taste
  • 1 jar of your favorite spaghetti sauce or 1 qt. homemade
  • 1 egg, beaten with 2 T. milk or water


Place chicken between two layers of saran or wax paper and pound out even and flat. If too large, cut in half. Mix flour, crumbs and salt and pepper together. Dip chicken in egg mixture then bread with flour mixture. Fry in small amount of oil until golden brown. In casserole, pour half of the spaghetti sauce in bottom, layer chicken on top...sprinkle with parmesan cheese...rest of spaghetti sauce then mozzarella on top. Bake in hot 350 oven for 35-45 minutes, until bubbly and cheese is melted...enjoy...great with a tossed salad and garlic bread.
