Ingredients

  • 10 large garlic cloves
  • 1/4 cup red wine vinegar
  • 1/2 tsp salt
  • 1 cup olive oil
  • 2 tsp Dijon mustard
  • freshly ground black pepper

Directions

Preheat oven to 350 F. In oven-proof dish, roast unpeeled cloves, tossed with 1 tsp of oil for 25 minutes (stirring occasionally) or until garlic is soft. Remove from oven and when cooled, squeeze cloves from peel. Chop finely, discarding any hard bits. In medium bowl, whisk vinegar, mustard, garlic, salt and pepper. Gradually whisk in remaining oil. Put dressing in a container and shake until well mixed.
