I like to add roasted garlic to salad dressings, pasta dishes and mashed potatoes, but most of all, I love it spread on toasted slices of French bread, on which a bit of olive oil has been drizzled. There is a recipe for the potatoes in the archives that I posted a while back. Since then I've changed it somewhat, making a paste out of the roasted garlic by running it through a food processor a couple of times before adding it to the potatoes. It's still a winner around here! :) Enjoy!
