Ingredients
- 1 (8-10 lbs.) boneless, fully cooked ham
- Glaze:
- *1/4 cup apple juice OR dry white wine
- 2 tablespoons lemon juice
- 2 teaspoons cornstarch
- 1/3 cup seedless rasberry jam, divided
- 1 tablespoon butter
- Watercress, parsley OR other greens
Directions
Score ham in diamond shapes; place on a rack in shallow roasting pan. Bake at 325 degrees F. about 2 hours until meat thermometer registers 140 degrees F. (Ham may also be done on a gas grill or charcoal barbecue-following manufacturer's directions.) In a saucepan, blend apple juice/wine and lemon juice into cornstarch. Add about 1/2 of jam. Cook and stir until thickened and bubbly. Stir in remaining jam and butter. Heat and stir until butter is melted. Brush ham with glaze. Bake ham 10 minutes more. Spoon any additional glaze over ham.*You may want to double the glaze recipe and thin it slightly with water to pass with ham. Garnish ham with greens. Yield: 24-30 servings
