Ingredients

  • 500gr. fresh zucchini
  • 500 gr. pasta (penne)
  • salt & pepper
  • dried chili pepper
  • garlic
  • parmesan cheese

Directions

Cut the zucchini in 4-5 pieces and let them soften for 5 minutes in a pan on a slow fire with salt,pepper,chili pepper and garlic.
Put the zucchini in a bigger pan with salty oiling water.After 10-15 minutes when the zucchini are almost done put the pasta in.

It is very important that there is not a lot of water.When the pasta is ready there should not be much water left,actually there should not be water at all.I am shure after a couple of times you will be able to estimate the right amount of water.This is important to mantain the taste of the vegetables in the food and not in the sink when you drain the pasta!

Add the cheese (parmesan, it's a must!) and eat it hot.
