Ingredients

  • 1 cup margarine
  • 1 cup granulated sugar
  • Dash salt
  • 2 tsp. baking soda
  • 2 tsp. ginger
  • 2 tsp. cinnamon
  • 1/2 tsp. allspice
  • 1 cup molasses
  • 1 egg, unbeaten
  • 4 cups flour
  • 3/4 cup double-strength coffee

Directions

Cream margarine. Add sugar and stir until fluffy. Stir in salt, baking soda, ginger, cinnamon and allspice. Blend in molasses and unbeaten egg, and mix well. Add flour alternately with coffee, and continue beating for 1 minute.

Drop dough by teaspoonfuls onto a lightly greased baking sheet. Bake at 350 degrees for 12-15 minutes. Remove from baking sheet.


Makes 5 dozen large cookies each with 75 calories, 1.7g fat and 3.55 mg cholesterol.
