Ingredients

  • 1/2 cup sifted cake flour
  • 1/4 cup sugar
  • 2/3 cup (5) egg whites
  • 1/2 teaspoon cream of tartar
  • Dash salt
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon almond extract
  • 1/2 cup sugar

Directions

Sift flour with 1/4 cup sugar 4 times.
Beat egg whites, cream of tartar, salt, vanilla and almond extract until egg whites are stiff enough to hold up in soft peaks but are stillmoist and glossy. Add remaining 1/2 cup sugar to egg whites, 2 tablespoons at a time,beating after each addition to blend. Sift about 1/4 of flour over egg-white mixture and fold in lightly.Fold in remianing flour by fourths. Bake in UNGREASED 10x5x3-inch loaf pan in moderate oven (375 degrees) 25 minutes or until done. Remove from oven, invert pan, and let stand 1 hour, or until cool.
