Ingredients

  • 1 8-ounce box chicken flavored Rice-A-Roni
  • 2 6 1/2-ounce jars marinated artichoke hearts
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 4 - 5 green onion, sliced, including part of the green
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 1/2 teaspoons prepared mustard
  • Generous grind of black pepper

Directions

Cook Rice-A-Roni according to package directions,using just 1 tablespoon butter in the browning step and 2 1/2 cups water to cook. Cool to room temperature. Meanwhile, drain artichokes, reserving 3 tablespoons of the marinade. Cut each piece of artichoke heart into 2 or 3 pieces and discard any tough, fibrous pieces. Add artichoke hearts, bell peppers, and onions to the cooled Rice-A-Roni. In small bowl, combine mayonnaise, sour cream, mustard and reserved artichoke marinade. Add pepper and stir well. Fold into Rice-A-Roni mixture. Transfer to serving bowl. Cover and refrigerate until well chilled. May be made a day ahead. If desired, garnish with red and green bell pepper rings.
